Another "Recipe" post?! Whaaaaat is going on?!

So I'm trying to eat healthier (story of my life). I've been eating more salads. And by salads, I don't mean some lettuce covered in croutons swimming in a sea of ranch. It's like an actual salad. I should throw in more veggies. But it's all  about baby steps, right? I'm just proud that I'm eating this salad more than pizza and donuts (it's a miracle!).

I don't know if this is a recipe already. I kinda just threw a bunch of stuff together that I had and it turned out delicious. I totally felt like I was on a cooking show when I was throwing everything together. Doesn't everyone feel that way when they cook?

Anyways, I eat this salad about 4 times a week. It's that good. And it's so easy to prepare. Who doesn't want to eat something that requires literally no prep time? 

I present to you, my random salad!


Ingredients:

Lettuce - I use Organic Spring Mix

Quinoa (cooked in chicken broth instead of water- makes a huge difference!)

Goat Cheese Crumbles

Dressing - Balsamic Vinegar & Olive Oil 

Directions:

A couple handfuls of lettuce

A cup of quinoa (save the rest for another salad, duh)

A few sprinkles of goat cheese

A splash of balsamic vinegar and olive oil

Mix everything together in a bowl then inhale it because it's so yummy! 


Easiest so-called recipe, right?! I'll probably make this tonight and add some chicken to it!
